Make Your Own Tacos

Here is a healthy, simple, and delicious dinner recipe that everyone in the family loves. Kids especially dig choosing their favorite ingredients and making their own tacos. The nice part is that you can make this meal with a range of ingredients depending on what you have around, and it always tastes great. It takes 20-30 minutes to prepare.
- Cook organic free-range chicken breasts in a small amount of olive oil. Brown and partially cook the chicken first; then pull it into thin strands and finished cooking it with sautéed red onion and olive oil, adding salt and cumin. The “pulled” chicken absorbs the flavor more thoroughly than chunks do.
- Fresh black beans with sautéed onion, salt, and cumin, are great too, instead of chicken. Soak the beans overnight; then cook them at a simmer until softened.
- Fresh corn tortillas lightly pan cooked in coconut oil (a healthy oil recently much maligned that adds excellent flavor to corn tortillas). Avoid flour tortillas, which are an inferior substitute for corn tortillas in flavor and food value.
- Include any combination of the following additional taco ingredients: freshly grated cheddar cheese; strips of organic red leaf lettuce; chopped black olives; regular (full fat) sour cream; homemade guacamole; green (or red) salsa; fresh tomatoes in season.
Make-Your-Own Tacos
As with all cooking, use as many ingredients as you can that are organically and locally grown. Substitute freely depending on your tastes and what’s available.
